Nicaragua has been a place i’ve had the opportunity & great privilege to call home since 2017. It is truly a country set apart - the people, the culture, the warm smiles, & the surf. This “little” surf town has brought me so much joy & taught me so much ever since we opened our cafe there - Ding Repair Cafe.

Our cafe was founded on whimsy and adventure by two travelers with the desire to create a space for others to connect, feel at home & known, all while enjoying delicious & nutritious dishes. Our tagline “treat your body like you treat your surfboard” stems from the idea to treat our bodies (mind, body & soul) with as much care, attention & value as we give our possessions. It has always been a space for digital nomads, yogi’s, surfers, locals & travelers alike to come together and learn from one another, connect and enjoy very good (arguably the best) espresso & flavorful dishes - never sacrificing on quality & freshness.

Recently, we hosted an intimate pop up dinner experience that merged the worlds of surf centric vegetarian cafe + decadent cheese & charcuterie boards - complete with a perfectly paired wine flight tasting. The menu had a little something for everyone at our “Noches de Vino.”
Pulling this off in a developing country is not an easy feat, there’s always something that comes up - this time.. the whole country was out of BRIE. Crazy, right?
And yet, it was perfect. I took on the opportunity to work alongside our girls who run our kitchen (aka the heart & soul of Ding Repair); while Corinne, Mikayla & our guest Sommelier, Claire hosted a magical experience for all our guests.
